Spices make or break a dish. Not only do they add flavor, they also help to neutralize the umami, which makes it taste like meat. It is also very hard to resist the strong aromatics in certain dishes, especially in those which are salty and spicy. So I would recommend trying them out on your own to get an idea of what spice flavors you like best.

I think this is a great dish. I especially like the fact that there is no meat in it. And because the meat is from mole, the meat is a good source of iron. I have never been fond of meat, but I have never been a heavy food eater. My favorite thing to eat at home is my own homemade cheese.
